THE BEST vegetarian meal prep I have EVER made! 


The KEY to making good tofu is to PRESS IT to remove excess moisture. This will ensure that it stays FIRM, browns well, and does not get soggy.



  • 1 block extra firm tofu, cut into slices
  • 7-8 large mushrooms, diced
  • 1 7-oz can chipotle peppers in adobo sauce
  • 4-5 cloves garlic
  • 1 tablespoon coriander-cumin powder (or 1/2 tablespoon each coriander and cumin)
  • 2 tablespoons vinegar (I used balsamic, you could also use apple cider vinegar)
  • 1 tsp adobo pepper powder (optional) 
  • 1 tsp chipotle powder powder (optional) 
  • Olive oil spray 


  1. Slice the tofu and PRESS the slices between paper towels to remove excess moisture.
  2. Spray a pan with oil spray and sautée the garlic until soft.
  3. Add the mushrooms and cook until the mushrooms have been softened.
  4. Blend the chipotle peppers in a blender / food processor so they become a paste
  5. Add the pepper paste inno the mushroom sauce, and mix thoroughly
  6. Add all the other spices and the vinegar (chipotle pepper, adobo pepper, and coriander-cumin powder)
  7. Crumble the tofu into the mixture, and cook for another 4-5 mins until the tofu is browned 

DEVOUR!! I ate mine with quinoa for some healthy carbs and roasted cauliflower for some veggies!








Who says egg whites need to taste rubbery? Give me some masala and spices and I'll hand you egg whites that will BLOW YOUR MIND.

Macros: Mostly protein. You can use real eggs if you'd like some fats in here. Eat with a side of bread or rice to round out your meal with carbs!




Makes 1-2 servings, depending on how hungry you are and how much protein you want.

  • 1 cup liquid egg whites
  • 1 handful spinach, fresh or frozen
  • 1 chopped tomato (optional) OR 1/2 cup low-sodium tomato sauce 
  • 1/2 onion (OR 1 tsp onion powder)
  • 1 clove garlic, minced (OR 1 tsp garlic powder)
  • 1 teaspoons: garam masala, cumin, and coriander powder
  • 1/2 teaspoon: turmeric, red chili powder (*Use less red chili if you are sensitive to this)
  • Sea salt + Black pepper to taste


1. Spray a pan with olive oil spray, and sauteé the onion and garlic

2. Add the spinach and tomato and cook (or thaw spinach if it's frozen).

2. Add the egg whites and cook, scrambling around in the pan. 

3. Add all the spices. Taste as you go to ensure you like the taste! 



Simple, quick, easy, and DELICIOUS! This takes just 10 minutes to make 


The SECRET to quick and delicious sweet potatoes?


You don't have to spend hours waiting for them to roast. Soften them in the microwave, and then get them crispy on the stove. 

I use olive oil SPRAY on these only, to save calories without compromising on flavor and crispiness.


1. Slices raw sweet potatoes in cubes. Leave the skin on.

2. Cover the slices with a wet paper towel and cook in the microwave for about 4-6 minutes until soft enough to easily pierce with a fork. Depending on the size of your sweet potato you may need to go for longer time.

3. Heat up a pan and spray it with olive oil SPRAY.

4. Toss the sweet potatoes in the pan, and continue to thoroughly spray them with more oil spray. 

5. Stir fry. "hash"-style, and toss with SEA SALT, BLACK PEPPER, and ROSEMARY

That's it! Serve as a side to breakfast, or eat it with lunch / dinner!



These are so juicy, and bursting with garlicky, spicy, savory goodness. They are super easy to make, and amazing over rice. They stay great for meal prep too! 

I used chicken, but you can make 'em with chicken, turkey, or beef if you prefer! 

Spicy Asian Chicken Meatballs

Makes 4 servings


  • 1lb ground chicken, turkey, or beef (I suggest using 93% lean as it's juicier and more flavorful. I found the 99% lean meat was to rubbery for these) 
  • 6-8 cloves garlic, minced
  • 1/2 tablespoon minced or grated ginger
  • 2 tablespoons fish sauces 
  • 2 tablespoons chili-garlic sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon soy sauce


1. Pre-heat oven to 350 degrees
2. Mix all ingredients together. Use your hands or a fork to really meld the ingredients into the ground meat.
3. Form balls with the meat.
4. Bake for about 10-15 mins until the meat is cooked through

GARNISH with chopped scallion + cilantro
SERVE with rice and veggies
